10 Minute No Egg Salad

(Serves approximately 4 people, prep time 10 minutes)
This is my favorite sandwich stuffer by far. No stove, super easy, kid approved, and great for packing quick lunches. I love pickles so I use all different types, but you don’t have to do this as I know a lot of people hate bread and butter pickles (I used to be one of them lol). I love it on some Dave’s Killer Bread with some Vegenaise, yum! Don’t forget the black salt!
Ingredients:
- Extra firm tofu (14 oz)
- Green onion (1.5 tbsp)
- Dill pickle relish (1 tbsp)
- Sweet pickle relish (1 tbsp)
- Bread and butter pickles diced (1 tbsp)
- Onion powder (1 tsp)
- Yellow mustard (1 tsp)
- Stone ground mustard (1 tsp)
- Turmeric (1/2 tsp)
- Kala Namak (Black salt) (1 tsp)
- Lemon juice (1 tsp)
- Smoked paprika (1/2 tsp)
- Vegan mayo (4 tbsp or as desired)
- I use Vegenaise
- Salt and pepper as desired
Directions:
- Drain the tofu and cut into 1/2 inch cubes
- You do not need to press the tofu but you can for a more firm texture if desired
- Put the tofu in a large bowl and mash it with a potato masher until most of the tofu becomes a crumbly texture
- Dice the green onion and add it to the bowl with the tofu
- Add in the remaining ingredients and stir
- Top with salt and pepper as desired and serve!
