Simple No Tuna Salad

(Serves approximately 4 people, prep time 10 minutes)
Great for easy quick lunches. All you need is 1 bowl and a cutting board! Garbanzo beans have a “fishy” flavor so they are perfect to use to make vegan tuna salad. You could also add some seaweed in here for an extra fishy flavor if desired. I eat this no tuna salad on Dave’s Killer Bread with some Vegenaise, but it would also do great on a salad.
Ingredients:
- Garbanzo beans (15 oz)
- Green onion (2 tbsp)
- Celery (1 stick)
- Sushi Ginger (diced) or ground ginger (1 tsp)
- Garlic powder (1 tsp)
- Lemon juice (1 tbsp)
- Stone ground mustard (1/2 tsp)
- Vegan mayo (4 tbsp or as desired)
- I use Vegenaise
- Salt and pepper (to taste)
Directions:
- Drain and rinse the garbanzo beans, add to large bowl
- Mash the beans with a potato masher until most of the beans are smashed
- Dice the green onion and add it to the bowl
- Dice the celery and add it to the bowl
- Add the remaining ingredients and stir together until well mixed
- Top with salt and pepper as desired and serve!
