No Mayo Italian Pasta Salad

(Serves approximately 4 people, cook time 20 minutes)

This oil based pasta salad is super easy and great for potlucks or lunches. You can multiply the ingredients as desired to make a bigger serving size. I used rotini pasta, but you can use a different type of pasta if preferred. You can also use Italian dressing instead of the vinegar if desired.

Ingredients:

  • Pasta (16 oz)
  • Sliced black olives (2.25 oz)
  • Tomato (1 whole diced or 1 rinsed can of diced tomatoes)
  • Avocado (1 chopped)
  • Fresh chopped green onion (2 stalks)
  • Lemon juice (1/2 lemon)
  • Nutritional yeast (1 tbsp)
  • Onion powder (2 tsp)
  • Garlic powder (3 tsp)
  • Parsley flakes (1 tsp)
  • Dill weed (.5 tsp)
  • Cajun seasoning (1.5 tsp)
  • Balsamic Vinegar (3 tsp)
  • Olive oil (5 tbsp)
  • Salt (as desired)
  • Fresh ground black pepper (as desired)
  • Crushed saltine crackers (optional for topping)

Directions:

  • Boil the pasta as instructed on the box. Strain and cool
  • While the pasta is boiling cut up the avocado, tomato, and onion
  • In a separate bowl mix all of your dry ingredients together
  • Add 3 tablespoons of oil to the dry ingredients and mix
  • Pour the mixture onto the pasta and stir
  • Add the rest of your ingredients, stir and serve
