No Mayo Italian Pasta Salad

(Serves approximately 4 people, cook time 20 minutes)
This oil based pasta salad is super easy and great for potlucks or lunches. You can multiply the ingredients as desired to make a bigger serving size. I used rotini pasta, but you can use a different type of pasta if preferred. You can also use Italian dressing instead of the vinegar if desired.
Ingredients:
- Pasta (16 oz)
- Sliced black olives (2.25 oz)
- Tomato (1 whole diced or 1 rinsed can of diced tomatoes)
- Avocado (1 chopped)
- Fresh chopped green onion (2 stalks)
- Lemon juice (1/2 lemon)
- Nutritional yeast (1 tbsp)
- Onion powder (2 tsp)
- Garlic powder (3 tsp)
- Parsley flakes (1 tsp)
- Dill weed (.5 tsp)
- Cajun seasoning (1.5 tsp)
- Balsamic Vinegar (3 tsp)
- Olive oil (5 tbsp)
- Salt (as desired)
- Fresh ground black pepper (as desired)
- Crushed saltine crackers (optional for topping)
Directions:
- Boil the pasta as instructed on the box. Strain and cool
- While the pasta is boiling cut up the avocado, tomato, and onion
- In a separate bowl mix all of your dry ingredients together
- Add 3 tablespoons of oil to the dry ingredients and mix
- Pour the mixture onto the pasta and stir
- Add the rest of your ingredients, stir and serve
